Description

Known in Australia as the Porterhouse steak, the New York strip is cut from the short loin of a cow. It has an intense flavour, with bold, beefy notes. It's not the most tender steak – one of the reasons people love it is for its great bite and solid chew.

The rich marbling inherent in this steak creates the robust flavour and a delicious eating experience.

Cooking Guide

Preheat: Preheat your grill or pan to high heat.

Season: Generously season the steak with salt, pepper, and your preferred herbs.

Cook:

Pan Sear: Sear the steak for 3-4 minutes on each side for medium-rare. Adjust the time for desired doneness.

Grill: Grill the steak for 4-5 minutes on each side for medium-rare. Adjust the time for desired doneness.

Use a meat thermometer to check the internal temperature:

  • Medium-rare: 55-60°C
  • Medium: 60-65°C
  • Well done: 70-75°C

Rest: Let the steak rest for 5-10 minutes before slicing to retain its juices.

Serve: Slice and enjoy with your favourite sides.
