Description

These Wagyu Rump Caps are just delicious and highly sought after. Cut them into steaks or roast whole - they are divine either way. Best served plain with a little salt and pepper. Great for Brazilian BBQ.

Produced by Jack's Creek, this wagyu is grain fed for 450 days.

Cooking Guide

Preheat: Preheat your grill or oven to high heat (200°C).

Prepare:

Season with salt, pepper, and your favourite herbs.

Score the fat cap to render the fat evenly.

Grill:

Grill for 3-4 minutes per side to sear and develop a crust.

Roast:

Place in a roasting pan, fat side up.

Roast at 200°C for 20 minutes, then reduce to 160°C and continue roasting for 40-50 minutes.

Use a meat thermometer to check the internal temperature: Medium-rare: 55-60°C, Medium: 60-65°C.

Rest: Let rest for 10 minutes before slicing against the grain.

Serve: Enjoy with your favourite sides and sauces.
