Cooking Guide

Preheat: Preheat your oven to 220°C.

Prepare:

  • Score the rind with a sharp knife.
  • Rub salt and oil into the rind.

Roast: Place the pork belly on a rack in a roasting pan.

  • Initial High Heat: Roast at 220°C for 30 minutes to crisp the rind.
  • Reduce Heat: Lower the temperature to 160°C and continue roasting for 1.5-2 hours.
  • Use a meat thermometer to check the internal temperature: Fully cooked: 70-75°C

Rest: Let the pork belly rest for 10-15 minutes before carving.

Serve: Slice and enjoy with your favourite sides.
