This is an amazing piece of meat. It is succulent, tasty and great cooked on the grill/BBQ. You can cut this whole piece to whatever thickness you would like. We like it cut thick and cooked medium.

Cooking Guide

Preheat: Preheat your oven to 180°C.

Prepare: Season the rib fillet generously with salt, pepper, and your favourite herbs.

Sear:

Heat a pan over medium-high heat with a little oil.

Sear the fillet on all sides until browned.

Roast:

  • Place the rib fillet in a roasting pan.
  • Roast for 20-25 minutes per 500g for medium-rare.
  • Use a meat thermometer to check the internal temperature: Medium-rare: 55-60°C, Medium: 60-65°C

Rest: Let the rib fillet rest for 15 minutes before slicing.

Serve: Slice and enjoy with your favourite sides.
