Description

A very popular cut from the rear end of the short loin, the sirloin has a fine grain and and is easy to spot, with the slender outside fat which enhances the flavour and succulence of the steak.

Cooking Guide

Pro Tips:

  1. Leave the fat on. #FLAVOUR
  2. Pat dry. If meat is damp, it will not brown well.
  3. Do NOT overcrowd. That slows down cooking and steams as opposed to sears. 

Preparation: Take the steaks out of the refrigerator 30 minutes before cooking.

Seasoning: Season generously wxith salt, pepper, and your favourite herbs.

Pan-Searing:

  • Heat a heavy skillet over high heat until smoking hot.
  • Add a tablespoon of oil with a high smoke point.
  • Sear steaks for 2-3 minutes per side for medium-rare.

Oven-Finishing (optional):

  • Preheat oven to 180°C.
  • After searing, transfer the skillet to the oven.
  • Roast for 5-7 minutes until desired doneness.

Resting: Let steaks rest for 5 minutes before serving.

Internal Temperatures:

  • Rare: 52°C
  • Medium-Rare: 57°C
  • Medium: 63°C
  • Well-Done: 71°C
