Description

Oyster Blade is one of the unsung hero cuts that is well suited to braising, slow cooking or pan-frying. Cut from the shoulder, it is a flavourful cut that is quite tough, due to a vein of connective tissue running through the centre, which lends itself to incredible succulence when properly cooked.

It is a very popular cut in Korean BBQ cuisine.

Cooking Guide

Preheat: Preheat your grill or pan to medium-high heat.

Season: Season the steaks with salt, pepper, and your preferred herbs.

Cook:

Pan Sear: Sear the steaks for 4-5 minutes on each side until the desired doneness.

Grill: Grill the steaks for 5-6 minutes on each side for medium-rare.

Slow Cook: For tender results, slow cook for 4-6 hours in a braising liquid.

Use a meat thermometer to check the internal temperature:

  • Medium-rare: 55-60°C
  • Medium: 60-65°C
  • Well done: 70-75°C

Rest: Let the steaks rest for 5-10 minutes before serving.

Serve: Enjoy with your favourite sides.
