Almond & Mandarin Cake
This one is easy peasy! It takes a little bit of time to boil the mandarins - but you don't need to actively cooking during that time.
Ingredients
5 mandarins
5 eggs
2 cups almond meal
1 cup of coconut sugar or rapadura sugar
1tspn of baking powder
Method
Preheat oven to 180 degrees.
Put mandarins in saucepan, and completely cover with water, bring to the boil and simmer for two hours (covered).
Allow mandarins to cool, remove any pips and pith and then put all in a food processor (include the skin) and whizz to a pulp.
In a large bowl, whisk eggs and add all dry ingredients and whizzed mandarin pulp and stir well.
Put mixture in a lined spring form tin and bake for an hour or until skewer comes out clean and the cake is nicely browned on top.
It can be served with a dollop of Greek yoghurt or a sprinkling of icing sugar (or both!)
