Description

Angus Eye Silverside (Corned Beef) is a cut of meat that can be enjoyed both hot or cold. Traditionally it is boiled on the stove top, but for best results we recommend cooking it in a slow cooker.

If eating it hot, dress it up with a white sauce and serve with roasted vegetables. Leftovers call for a refreshing cold sandwich with cheese and pickles - or if you grew up like I did - turn them into corned beef fritters... the most delicious way to eat leftovers!

Cooking Guide

Slow Cooker Method

  1. Rinse beef in cold water to remove surface brine.
  2. Place in slow cooker with a bay leaf, half a cup of brown sugar, one onion and cloves. Cover with cold water and put the lid on.
  3. Set slow cooker to either low for a cooking time of 8 hours or high for a cooking time of 4 hours.

Stove Top Method

  1. Rinse beef in cold water to remove surface brine.
  2. Place into a heavy-based pot and cover with cold water.
  3. Bring pot to boil, then reduce heat to a low simmer.
  4. Add aromatics.
  5. Maintain simmer and allow 25 – 30 minutes per 500g of corned beef for cooking time.

Serve with white sauce and vegetables or slice thin and serve on a crusty bread roll with cheese, tomato and pickles.
