Description

This cut comes from the shoulder of lamb. Our butchers have removed the shoulder blade, excess fat and gristle and rolled it up into an easy-to-carve joint.

This needs low and slow roasting to render out the fat, however, this guarantees the meat will come out moister than any other cut of lamb roast.

Perfect as a winter warming roast!

Cooking Guide

Preheat Oven: Preheat your oven to 160°C.

Season: Rub with olive oil, salt, pepper, garlic, and rosemary.

Sear: Heat a pan over medium-high heat and sear on all sides until browned.

Roast: Place in a roasting pan.

Cook: Roast for approximately 2.5-3 hours, or until the internal temperature reaches 63°C.

Rest: Let rest for 15 minutes before carving. Enjoy!
